Sweet Carthusian dumplings with vanilla sauce

Cut the sandwich baguettes in half crosswise and place in a bowl with the cut side facing upwards.
Whisk together the milk, cream, eggs, sugar and vanilla sugar. Pour over the sandwich baguettes and leave to stand until the liquid has been completely absorbed.
Wash and dry the lemon and finely grate about 1 teaspoon of zest. Add to the sandwich baguettes, then shape the mixture into 8 dumplings.
Place the breadcrumbs in a bowl, coat the dumplings all over and then fry slowly in plenty of clarified butter until golden brown on all sides.
Meanwhile, prepare the vanilla sauce. Bring 400 ml of milk to the boil. Mix the rest of the milk with the remaining ingredients. Stir into the boiling milk and allow to simmer, then remove from the heat.
Drain the baked Carthusian dumplings briefly on kitchen paper, then roll in cinnamon sugar and serve with the vanilla sauce.
