Lucky toadstools for the party buffet

Ingredients


  • 2 IBIS baguette rolls (pack of 6)
  • 50 g mountain cheese
  • 250 g cream cheese
  • Salt
  • Pepper
  • 1 bunch chives
  • 20 cocktail tomatoes
  • 1 tbsp mayonnaise

Instruction

Preheat the oven to 200 °C. Line a baking tray with baking paper. Place the baguette rolls on the tray and bake for 10 minutes until golden brown. Remove and leave to cool. Then dice them.

Grate the mountain cheese. Place in a blitz chopper with the cream cheese and bread cubes and blend to a malleable mass. Season with salt and pepper.

Wash the chives, shake dry and cut into fine rolls. Place in a bowl.

Form 20 small balls from the bread mixture. Press one side lightly into the chives so that the underside is covered. Cover and chill the balls for at least 2 hours.

Just before serving, cut a slightly thicker slice off the stem end of the cocktail tomatoes. Scoop out the larger half and place on the "stems". Arrange the mushrooms on a serving plate. Using a wooden stick, dab the mayonnaise onto the tomatoes in small dots.
