Lavash rolls with minced meat filling

Preheat the oven to 180 °C top and bottom heat. Line a baking tray with baking paper.
Remove the IBIS Lavash Classic from the packet. Cut each of the long lavash in half to make 4 squares. Spread a thin layer of water on each square, then spread 1 tablespoon of pesto on each square.
Place the mince in a bowl with the rub of your choice and knead well. Spread thinly over two squares. Grate the cheddar and sprinkle over the mince. Place one square on top, pesto side down, and roll up tightly.
Wrap each roll with 7 slices of bacon and secure with wooden skewers to stabilize. Place on the baking tray and bake for 25 minutes. Carefully remove the tray and brush the rolls with BBQ sauce. Place back in the oven, increase the temperature to 220 °C and bake the rolls for a further 5 minutes until crispy.
Remove, leave to cool slightly, then cut each roll into 8 slices. Secure with a wooden skewer and arrange on a platter. Delicious both warm and cold.
Tips:
1. the rolls can also be prepared perfectly in a kettle grill. First cook over an indirect heat, then brush with BBQ sauce and then grill over a direct heat until crispy, turning regularly.
