Bread doughnuts with cinnamon sugar for carnival

Preheat the oven to 200 °C convection oven. Line a baking tray with baking paper. Bake the baguette rolls in the hot oven for 10 minutes. Then remove and leave to cool completely on a cooling rack.
Dice the bread, place in a bowl and leave open to dry for at least 6 hours.
Heat the milk and pour over the bread. Cover and leave to rest for 20 minutes.
Whisk the eggs with sugar in a bowl. Squeeze the bread cubes a little and add to the egg with the vanilla sugar. Sift the flour over the egg and whisk to a smooth batter.
Heat enough oil in a saucepan or deep frying pan. Using two tablespoons, cut dumplings from the dough and fry them in the hot oil until golden brown. Lift them out with a skimmer, let them drip off, then roll them around in a bowl of cinnamon sugar.
Preparation time: approx. 20 minutes (plus approx. 10 minutes baking time, 6 hours drying time and 20 minutes steeping time).
